October in Upstate New York is time for apples and raspberries! I always knew that it was the season of apples, but I never knew that Raspberries were in season in early October. Here’s a delicious one:
Raspberries from Lyman’s Sleighbell Farm
Look in your local area for farms and orchards to pick- many will have a schedule for varieties.
You can freeze raspberries in the same way you would blueberries (see my post here); they are great for yogurt and french toast topping.
So what to do with all of those apples? Apple sauce! I paired it with some delicious home made potato pancakes…yum!
For my instant pot apple sauce:

10 peeled & quartered cortland apples (or really any of your choice)
2 cinnamon sticks
1 tsp cinnamon
1 cup cider
2 tbsp butter (I use earth balance to make it dairy free)
Put your instant pot on high pressure for 3 minutes. Release pressure and mash apples with fork. Serve warm or cold.
